Actually, this book address more than the health issues with wheat and dairy, it addresses sugar, touches on the effects of emotions on our digestive system, the lymphatic system, and my personal favorite, GMO’s. What really grabbed me was the section where Dr. Douillard explains why and how GMO’s and toxins create havoc on our digestive system and how we can repair the damage.

I love the quote: “As the studies show, humans have been eating gluten for a very long time. Why is it that, suddenly, after so many thousands or millions of years of eating wheat and other glutinous grains as in-season dietary staples, eating a gluten-free diet is now one of the most prominent dietary trends?” Eat Wheat explains why.

When something is broken, we fix it.
